Baked by Melissa enters Target with first at-home cupcake mix

Baked by Melissa is making its debut in retail with a new line of at-home baking products, now available exclusively at Target stores just in time for the holiday season. The brand is introducing cupcake kits, liners, and a cupcake pan featuring its signature bite-size cupcake portions. The new offerings come in three festive flavors: Christmas Tie-Dye, Marshmallow Hot Cocoa, and Red Velvet. This move into consumer packaged goods reflects a wider industry trend where restaurants diversify revenue by entering grocery channels.

The bakery was founded in 2008 by Melissa Ben-Ishay and currently operates nine physical locations in the New York area while shipping cupcakes nationwide. Ben-Ishay has built a significant social media following, with over 2.8 million TikTok followers drawn by popular recipes and collaborations with well-known brands like Ferrero and Wonder. Her online presence helped build momentum for the decision to develop retail baking products, which she pursued more seriously starting a year ago after a visit to a Target baking aisle inspired her to bring Baked by Melissa to store shelves.

Although Baked by Melissa can quickly respond to consumer trends—as demonstrated by their rapid creation of New York Knicks-branded minicupcakes following the team's NBA championship win—the development of retail products required a much slower process involving approvals and partnerships. After about a year in the making, the holiday-timed launch at Target marks a significant step for the regional company into national consumer packaged goods, offering an accessible way for consumers beyond New York to experience their products.

For Target, securing this exclusive line is part of its strategy to increase shopper spending during an important sales period following a weaker holiday season the previous year. The retailer aims to connect with its core demographic, represented in part by Ben-Ishay herself, a 42-year-old mother of two who frequents Target. This collaboration symbolizes a synergistic effort to extend brand reach while appealing to festive at-home baking experiences for Target customers.
